Cucumber and Mint Smoothie

Cut the cucumber in half lengthways and use a teaspoon to remove and discard the seeds. Put the cucumber in a blender, add the yoghurt, mint and salt (optional) and process until smooth.

Pour the drink into glasses, add a couple of ice cubes and decorate with extra mint.
