Holidays are still in full swing, so we thought we’d share a recipe for a party drink – our take on a Virgin Pina Colada.
For those of your who can resist temptation, just drink it as it is or add a few drops of rum flavouring for extra authenticity. If you’re a naughty booze lover, go ahead and mix in some liquor, at least you can comfort yourself with the thought of eating your vitamins.
Here’s what you do:
Peel the pineapple and remove the tough core. Chop the flesh into chunks and freeze for at least two hours or overnight.
Put the frozen pineapple in a blender, add the coconut and soya milks and process until smooth.
Pour the smoothie into a tall glass and serve immediately, decorated with a sprinkling of toasted coconut, if you desire.
